A passionate craftsman since a young age, Pascal Exposito developed his know-how in sharpening in 1987, before turning to high-end artisanal cutlery. In love with his land and its history, it was in 2011 that he made his dream come true and opened the Couteliers Basques workshop-boutique in Bidart. Surrounded today by his associates Andréa and Xabi, experienced cutlers and salespeople who are fine connoisseurs, he opens the doors to his cutlery world all year round in Bidart.

Les Couteliers Basques, authentic shops to discover in the Basque Country

Lovers of Basque knives will be delighted to discover the products made in Bidart, a shop located in a 1769 farm which also has quite a history. During your visit, you are welcomed by the artisans who take the time to explain to you the culture , the soul and the history of the house, but also of the Basque knives so dear to their hearts. Open your eyes wide, the workshop is glazed, allowing you to see the cutlers at work, an impressive spectacle of meticulousness and details to observe. Les Couteliers Basques are also shops in the heart of the historic district of Bayonne, and on the main street of the village of Espelette. Their collections are presented of course, as well as those of other renowned cutlery brands. In Arcachon, the Basque Cutlers are also represented in their almost century-old cutlery which bears the name “Autour du Couteau”. Limited series knives from the Relais Pinel cutlery are presented, as well as a very special creation from the Couteliers Basques made for this address, the Pinasse Pliant knife. Whatever the location, your objects can be personalized with an engraving, or sent to Bidart for quality sharpening.

Basque Cutlers, ancestral know-how preserved in the workshop

Wood is a living material that you must know how to handle to obtain quality Basque knives that last over time, true objects of art worked with precision. At Couteliers Basques, medlar is valued, a species used for years in the Basque Country for shepherd's staffs. To enhance it, 4 steps are necessary between scarifying the most beautiful branches, collecting in winter, stripping the bark and peeling after burning with a wood fire. This entire process is carried out by artisans who select the wood they will use directly from the forest. Drying is the stage that takes the longest since you have to wait 3 to 4 years to be able to process the medlar vintages. Open the door to the workshop, come and admire the magnificent Basque knives where each one tells its own story depending on the climate that accompanied it all these years after being scarified.

  • The precious knives are true artisanal creations, authentic collector's items made from noble materials such as mammoth ivory, mother-of-pearl or juniper with a Damascus steel blade.
