    • For more than 40 years, the ONETIK cheese dairy has been producing authentic and tasty Basque cheeses with the greatest respect for tradition.

      Located in Macaye, a small village in the Basque Country, ONETIK collects milk from more than 200 farms to transform it, in its workshops, into a full range of cheeses made from sheep's milk (including PDO Ossau-Iraty), cow's milk and Goat.

      In these cheeses with a unique taste, it is all the richness and diversity of the Basque landscapes and characters that are expressed.

      Every summer, the producers of the ONETIK cheese dairy introduce you to their herd, the dog that watches over it and their facilities. They explain to you all the care taken in breeding to produce good milk which in turn will make good cheese.

      A story of Basque passions!

      Upon return from the visit, a tasting is offered at the shop, to all participants.

      Onetik, a cooperative and family cheese dairy!


      Onetik supports more than 200 farming families across the Basque Country
      If some farms are located in remote or very small areas, Onetik will
      maintains milk collection.

      It thus works to maintain the small farms that form the fabric of the region and to safeguard reasoned breeding.
      All the young people, who want to settle, are accompanied.
      All liters of milk are remunerated at the same level.
      Onetik supports farm cheese producers by collecting their excess milk.
      Even if the breeder produces beyond the quotas, the production surpluses remain paid at the best price. No penalty is applied.


      Do not hesitate to come and taste the fruit of the passionate work of its breeders directly at the shop in Macaye, open Monday to Friday from 9:30 a.m. to 6 p.m. all summer and from 9:30 a.m. to 12:30 p.m. and from 2 p.m. year.
      Our shop is closed on public holidays and weekends.

    When we exited our car in the parking lot, we were immediately greeted by the fragrant scent of milk in the air. The boutique offers a small selection of cheeses, with several available for sampling. Most of the cheeses are sold by the piece, while those sold by weight require a minimum purchase of 1/4 of the wheel (~1kg). Service was friendly. There is also a water point and toilet available. Note that they offer free visits to the farm in July and August at 10AM. You can email / call to reserve a spot.

    We've been not there yet, but we're still q enjoying a piece of Tomme des Pyrenees we found by chance somewhere in Normandie. I'm in love with this cheese and had to find where was it made! Our love for the Pyrenees region, either Spanish or French comes around on each bite of this delicious creamy piece of heaven. It is takes me back to the lush green landscape with snowy tops we admire so much! Next time in our tribales to Spain, we'll try to visit the factory and the shop! ❤️

    I just bit into a thick slice of Brebis, and my immediate response was, "Oh my God", I am in heaven! This Brebis, which is 50% goat's and 50% sheep's cheese is absolutely remarkable in creaminess and texture that coats the entire palate. I have never, ever tasted a cheese that is so rich with flavor and aroma: each bite demands another one. I forward to pairing it with Italian grapes and a bottle of Blanquette Limoux.
