Discover authentic Basque knives handcrafted according to the rules of the art in Bidart

Artisan cutlers in Bidart since 1987.

Son of fishmongers in Biarritz, Pascal Exposito wonders about how to maintain his parents' knives. He left to train in sharpening and very quickly found followers of his know-how among neighboring traders. He gradually expands his skills with a very specific idea in mind : making his own knives from scarified medlar wood, inspired by Makila.

This is how he created Mizpira , the first Basque medlar knife, adorned with the Lau Buru, the Basque cross. Next will come Artzaina, Bixia, Urkulua and Alios, all bearing the imprint of Basque culture, terroir and traditions through their shapes but also the materials used: handles in Basque linen from Maison Lartigue 1910, in pelota leather Basque, Kintoa pork or Herriko cow bones, leather cases from the Carriat tannery in Espelette, etc.

This unique know-how is exposed to visitors during a visit to the Bidart workshop-boutique. He can thus immerse himself in the wise gestures of the cutlers while benefiting from explanations on the history of the house and its creations.

Les Couteliers Basques also offers a wide selection of other cutlery and tableware brands (Opinel, Wusthof, Victorinox, Miyabi, Mison, etc.) as well as sharpening, renovation and personalized engraving services .

Open Monday to Saturday from 9 a.m. to 12 p.m. and 2 p.m. to 6 p.m. and Sunday (July/August only) from 11 a.m. to 6 p.m.
