      • Manex pigs: raised in Saint-Étienne-de-Baïgorry, on the Belarrea farm, these pigs are renowned for their marbled, tender and tasty meat. A true emblem of Maison Petricorena, Manex pork ham embodies all of Basque know-how. Its traditional maturing and delicate flavor make it an exceptional product, appreciated by gastronomy lovers.
      • Farm-raised pigs from the South-West: selected for their superior quality, they are used to make Bayonne Ham, an essential reference in charcuterie in the Basque Country.
