      An artisan charcutier for four generations, Maison Petricorena, located in Saint-Étienne-de-Baïgorry, embodies the passion and excellence of Basque culinary traditions. The house offers a wide range of artisanal products made from local and quality raw materials, in accordance with family recipes. Its local specialties are available all year round, offering gourmets the opportunity to discover and savor the flavors of the Basque Country.


      A complete range based on Espelette pepper and sweet pepper from the Basque Country

      Attached to the richness of its territory, Maison Petricorena makes a point of honor to integrate into its recipes emblematic products of the Basque Country, in particular the Espelette AOP pepper and the sweet pepper of the Basque Country known as the Anglet pepper.

      These ingredients are found in a wide range of condiments and homemade preparations , such as:


      Sakari Basque sauce: a unique and authentic recipe

      Sakari Basque sauce is undoubtedly the flagship product of Maison Petricorena. This spicy sauce, with its unique taste, is the ideal companion for grills, grilled meats, and many dishes. Highly prized throughout the region, this sauce has established itself over the years and is now an essential element of local and Southwestern gastronomy.

      The recipe for Sakari Basque sauce was passed down by Laurent Petricorena, a Basque shepherd who, after emigrating to Argentina, learned to season mutton in a particular way. Back in the Basque Country, he developed the family butchery business in Saint-Étienne-de-Baïgorry and became known for organizing Zikiros , large country meals where he served grilled mutton accompanied by his unique sauce. His son, Jean-Pierre, nicknamed "Sakari" (the scorer in Basque) for his exploits in Basque pelota, popularized this sauce, which now bears his name.

      Remaining true to its origins, this sauce has been passed down from generation to generation and is now available in several versions to satisfy all palates:

      • Sweet: The classic recipe that will suit all palates, ideal to accompany meat, fish, rice, pasta, eggs, etc.
      • Strong: this spicy version is perfect for those who like something spicy
      • Lemon: This light and tangy version goes perfectly with grilled fish and seafood.
