Frédéric Pommiers fell into the pastry business when he was little, alongside his maternal grandmother behind her oven. His passion evolved over time and led him to a Baccalaureate then a pastry chef's certificate, opening the doors to 3* Michelin restaurants at "Le Gavroche" in London, or at "le Moulin de Mougins" in Cannes. The dream came true in 1992 with the opening of his boutique which would become Maison Pommiers, after training in Valence with MOF Daniel Giraud. The adventure begins and ideas flow, notably that of innovating with new recipes for less sweet pastries, which respect the taste of seasonal products. A few years are enough for the Basque Cake to be at the center of all attention, the region's flagship product. Ready to treat yourself?

The trigger was almost immediate when one day at a restaurant, Frédéric tasted a disappointing Basque cake. This is the starting point of the whole story since after realizing that this emblematic pastry is not always valued, he wants to restore all its letters of nobility to the Basque cake, a living recipe which according to him must evolve over time. Since 2015, Frédéric and his teams have been baking, innovating and testing new recipes , until they find the perfect formula. Lighter, less fatty and less sweet, Maison Pommiers offers a contemporary version of the traditional Basque cake. Inimitable in its taste and in its shape which evokes an elegant Basque cross, it delights all the palates of connoisseurs and gourmets. The secret ? a redesigned manufacturing process, controlled temperatures and an adapted cooking method, quite simply.
