    • For more than 40 years, Onetik has defined the codes of authentic cheese production. Its approach is TRUE, attached to its roots, its history and those who made it grow. It strives to preserve, over the years, the fundamental values on which it was built: know-how, trust, tradition and respect for its land, its people and its animals.


      PROUD OF ITS EXPERTISE

      Onetik partner breeders must provide quality milk. On their farms, the sheep, cows and goats are fed healthily (guaranteed GMO-free for the Ossau-Iraty AOP), benefiting from all the richness of the grass and flora of the Basque meadows . The milk is collected from farms by Onetik before being processed in Macaye's workshops. There, cheesemakers and refiners put all their know-how into transforming milk into cheese. Matured over time and of great taste quality , each cheese is unique.

      Even if the cheese tradition of the Basque Country gives pride of place to the famous AOP Ossau-Iraty sheep cheese, Onetik offers a very good range of cheeses made from sheep's, cow's and goat's milk or mixed milks.


      THE SELECTION OF THE ONETIK CHEESE MAKER

      • L’Ossau Iraty AOP Grande Réserve

      It is an uncooked pressed cheese, originating from ancient Occitan customs of producing sheep's tommes. The Appellation unifies the Béarnaise traditions (Ossau valley) as well as the Basque traditions (Iraty forest) through two cheeses. They are both distinguished by their difference in format, taste typicity or in the choice of breeds of sheep. The Basco-Béarnaise is traditionally raised in Ossau, on the Béarnais side, while the Manech are raised in Iraty, on the Basque side. Ripened to the core, this cheese is distinguished by its frank character. Its flavors are more marked, its structure more robust.

      • Chebris, tomme with sheep's and goat's milk

      A beautiful alliance. Crumbly at first glance, this tomme will melt under your palate, revealing its aromas. The sweetness of sheep's milk is expressed by delicate caprine notes, whose rusticity leaves a slight nutty taste.

      • Basque Blue cheese with sheep's milk

      An ONETIK creation. Bleu des Basques is not an innovation like any other, it is the first sheep's cheese in the Basque Country. The finely developed marbling on the crumbly structure of this sheep's blue cheese gives it an iodized character as well as a slight persistence.

      The path chosen by ONETIK, of respect for tradition and commitment to the land , has allowed cheeses that were originally modest but tasty mountain specialties, intended for family consumption or for the small economy between villages , to be rewarded and recognized by the most knowledgeable gourmets around the world.

      9 medals at the International Product Competition at the Mondial du Fromage 2023, 9 distinctions at the World Cheese Awards 2022, 6 at the International Cheese Awards and 4 at the Concours Général Agricole 2022.


      Don't hesitate to come and taste its tasty cheeses directly at the Macaye shop open Monday to Friday from 9:30 a.m. to 6 p.m. all summer and from 9:30 a.m. to 12:30 p.m. and from 2:00 p.m. to 6:00 p.m. the rest of the year.

    When we exited our car in the parking lot, we were immediately greeted by the fragrant scent of milk in the air. The boutique offers a small selection of cheeses, with several available for sampling. Most of the cheeses are sold by the piece, while those sold by weight require a minimum purchase of 1/4 of the wheel (~1kg). Service was friendly. There is also a water point and toilet available. Note that they offer free visits to the farm in July and August at 10AM. You can email / call to reserve a spot.

    We've been not there yet, but we're still q enjoying a piece of Tomme des Pyrenees we found by chance somewhere in Normandie. I'm in love with this cheese and had to find where was it made! Our love for the Pyrenees region, either Spanish or French comes around on each bite of this delicious creamy piece of heaven. It is takes me back to the lush green landscape with snowy tops we admire so much! Next time in our tribales to Spain, we'll try to visit the factory and the shop! ❤️

    I just bit into a thick slice of Brebis, and my immediate response was, "Oh my God", I am in heaven! This Brebis, which is 50% goat's and 50% sheep's cheese is absolutely remarkable in creaminess and texture that coats the entire palate. I have never, ever tasted a cheese that is so rich with flavor and aroma: each bite demands another one. I forward to pairing it with Italian grapes and a bottle of Blanquette Limoux.
