Pierre Ibaïalde Visit our workshop in Bayonne

Pierre has been welcoming you for over 30 years now to help you discover his workshop and his profession. This guided tour lasts approximately 45 minutes, tasting included. You will know everything about the secrets of preparing ham, from raising pigs to curing the pieces over many months. You will pass through the curing room with 800 hanging hams, the salting room and the drying room will be presented to you in detail. And you will finish by tasting the house's flagship products.
