The Arka house, in addition to being an artisan charcutier, preserver, cook, is also a salter. Discover in its shop the Basque pork hams from Kintoa AOP matured for 28 months, the Bayonne IGP ham matured for 14 months and the Manex pork ham matured for 24 months. Developed with traditional methods that mature naturally. "Saran beti astia" in Sare we take our time. From the shop we can see the dryer or dries the belly, the dried loin, the coppa, the dry sausage, the chorizo. All these salted meats are made without nitrite salt, without preservatives, in accordance with traditional recipes, leaving time for time to mature. The charcuterie at Arka is tasty and refined.
